​Smoked Chicken Stir Fry

Ingredients:

Chicken legs boneless, cut into cubes 400 grams

2 teaspoons garlic paste/ Cold Grind Organic garlic powder

1 teaspoon Cold Grind black pepper
-
¼ teaspoon Cold Grind red chilli flakes
-
¼ teaspoon Cold Grind chicken masala
-
¼ teaspoon Cold Grind coriander powder
-
1½ teaspoons soy sauce
-
1 teaspoon Sesame oil
-
2 tablespoon spring onion (with greens)
-
1 large red bell pepper
-
1 tablespoon olive oil
-
1 teaspoon garlic (chopped)
-
1 teaspoon celery (chopped)
-
1 medium onion (cut into cubes)

1 cup broccoli florets
-
3-4 fresh basil leaves
Directions:

Put chicken in a large bowl and add garlic paste, some black pepper, chilli flakes and some soy sauce and mix well.

Now place a steel bowl in the middle of the other bowl and put a piece of hot coal in the steel bowl. Drizzle sesame oil over the coal piece and cover immediately to trap the smoke. Keep it covered for 3 minutes and then remove the cover & set aside. (You may also smoke the chicken on the barbecue).

Slice spring onion bulbs and reserve the greens. Now cut the red bell pepper (in any shape : square or triangles).

In a non stick pan add chopped garlic, celery, smoked chicken, onion and sauté.

Now add red pepper, broccoli and mix well.

Add chicken masala and coriander powder and the remaining soy sauce & black pepper and sauté well.

Finely chop the reserved spring onion greens and add some to the pan and also add basil leaves and salt.

Mix well and serve hot :)
