Aloo Gobi

Prep Time: 10 minutes
Cooking Time: 20 minutes
Servings: 2 

Ingredients:

  • 1⁄2 cup canola oil

  • 2 meduim potatoes, halved lengthwise and cut crosswise into 1 ½" pieces

  • 1 large cauliflower (broken into medium-size florets)

  • 3 medium onions, finely chopped

  • 1 small grated ginger/ 1 teaspoon Cold Grind  ginger powder

  • 2 tomatoes(crushed)

  • 1 1⁄2 tsp. Cold Grind Coriander Powder

  • 1⁄2 tsp. Cold Grind Red Chilli Powder

  • 1⁄2 tsp. Cold Grind Turmeric Powder

  • 1⁄2 cup Green Peas 

  • 1⁄2 tsp. Cold Grind Cumin Powder

  • 1⁄2 tsp. Cold Grind Garam Masala

  • Salt to taste

 

Directions: 

  • ​Heat oil in a skillet over medium-high heat;

  • Add potatoes, and cook, turning as needed, until browned (12 min)

  • Transfer potatoes to paper towels to drain the excess oil and set aside

  • Similarly, add cauliflower to oil, and cook until browned (10 min) and transfer to paper towel and set aside

  • Now turn skillet to medium-high heat and slowly add onions, and cook, stir until golden brown

  • Add Cold Grind Organic ginger powder, and cook for a few seconds and then add tomatoes, and cook until caramelized (4-6 min) 

  • Add Cold Grind Organic coriander powder and then add Cold Grind Organic Red Chilli Powder

  • Now add Cold Grind Organic Turmeric Powder and some Salt to taste. 

  • Cook till fragrant (1 min) and then throw in the potatoes

  • Now add cauliflower and peas

  • Add 2 tbsp water and stir till everything mixes well and cook until potatoes and cauliflower are cooked through for 5 minutes. Now add Cold Grind Organic Cumin powder and Garam Masala

  • Stir well. Garnish with some coriander leaves and ENJOY :)
