​Smoked Chicken Stir Fry
Fish with Roasted Red Pepper & Coriander Dressing

Ingredients:

600 g boneless Fish Fillets ( cut into 3 inch pieces)

1 large Red Pepper (roasted, peeled and diced) / canned roasted red peppers

1 tablespoon Cold Grind coriander powder/ Fresh coriander leaves chopped

1/2 teaspoon Cold Grind black pepper powder

2 tablespoon lemon juice
-
3 tablespoons olive oil
-
1 teaspoon Cold Grind garlic powder

2 tablespoons parsley (chopped)

1 teaspoon Cold Grind red chilli powder

Salt to taste
Directions:

Put fish in a large plate, sprinkle salt, 1 tablespoon lemon juice. Make sure to spread evenly onto every piece and set aside for 10-15 minutes.

Now heat 2 tablespoon of oil in a pan and add garlic powder and sauté for 2 minutes

Add roasted red peppers, coriander powder, red chilli powder, black pepper powder, parsley and mix well for 1-2 minutes.

Add remaining lemon juice and remove from the flame and put aside.

Now take a non stick grill pan and heat remaining 1 tablespoon of oil in it.

Add marinated fish pieces on it and cook for 2-3 minutes on each side.

Serve hot with the prepared coriander dressing. Enjoy :)
