Curry Ramen Broth

Ingredients:

  • 1 tbsp Coconut Oil 

  • ¾ Onion, diced 

  • 8-10 Mushrooms, diced

  • 4 cloves garlic, minced

  • 2 tbsp Red Curry Paste

  • 1 tbsp Curry Spice 

  • 1 tbsp Lemongrass Paste

  • ¾ tsp Ground Ginger

  • 1 Can Coconut Milk

  • 2 tbsp Tamari 
    1 tbsp Coconut Sugar

  • 1 tsp Lime Juice 

  • ¾ tsp Cumin 

  • 4 cups Chicken Broth


Directions:

  • Heat coconut oil in large pot over med-high heat.

  • Add onions & diced mushrooms, stirring until tender.

  • Add the garlic, curry paste, spice, lemongrass & ginger - stirring until fragrant.

  • In another bowl whisk together coconut milk, tamari, coconut sugar, lime juice and cumin powder.

  • Pour into vegetables, then whisk in chicken broth.

  • Bring to a boil, then simmer for about 20 minutes.

  • Season with salt and serve with favourite ramen fixings.
